These brownies-like cookies are a wonderful contribution to any holiday party as they’re festive and delicious, and they’re suitable for our vegan friends and family. The key to making brownies, or brownie-like cookies for that matter, is to dissolve the sugars before baking. This is what creates a shiny top and a tender crumb. In place of the traditional melted butter and eggs, this recipe calls for brewed coffee which lends a fantastic mocha flavor and gives us the moisture we need to dissolve the sugars and achieve that perfect fudgy texture.
Ground psyllium husk is an excellent natural egg replacer, and it helps the cookie dough gel. When baking for your vegan friends and family members, be sure to use organic sugar and powdered sugar as the conventional brands are considered by many to not be strictly vegan. Organic powdered sugar tends to have more lumps, but this can be easily remedied by sifting it before using. The almonds in this recipe can be omitted or replaced by chocolate chips to accommodate nut allergies.
