These cookies are based on Joshua McFadden’s Peanut Butter Cookies from his excellent book, Grains for Every Season. The nuttiness of the spelt flour lends itself perfectly to these classic peanut butter cookies, and the addition of spicy homemade peanut brittle brings a contrast of flavors and textures.

Tajin is a Mexican seasoning made with chiles, lime, and salt. It’s actually more zippy and zesty than spicy, and it pairs perfectly with the roasted peanuts in this recipe.
