This Italian-style salad is based on the idea of balancing nutty Farro with a light lemon and olive oil dressing. Farro is an Italian word that refers to spelt, emmer, and einkorn. However, you can make this recipe with any grains you choose.

Cooking grains like pasta is a great way to ensure success. Because different types of grain berries require different cooking times, simmering them in salted water and checking them often enables you to cook them perfectly al dente every time. To test the grains for doneness, simply taste them. As when cooking pasta, you’re looking for a soft berry with just a little bite.

This salad makes a great side dish, or for a complete meal, serve with a fried egg or two on top.
