The best way to familiarize yourself with new flour is to bake with it. If the flour is from a wheat berry that is either hard or spring, or both, it will likely work to make bread.
You can develop a bread recipe very easily, and sometimes developing your own recipe to test the flour simplifies the process and allows you to really learn.
We were gifted a sample of beautiful Rouge de Bordeaux wheat berries from our good friends at Grapewood Farm. We knew that these berries were classified as Hard Red Winter, and we knew that Rouge de Bordeaux is commonly used in bread making. We decided to bake a test loaf to get firsthand experience working with these beautiful grains.
