When the weather turns cool, I start thinking about the quintessential fall dessert: pie. I’ve made many pies over the years, but of course the most delicious ones were made with full-inclusion flour crusts. The earthy grains balance beautifully with any sweet filling, adding another layer of contrast that makes the whole thing sing. Over the next several weeks, we’re going to take a deep dive into all things pie, starting today with my essential tips and techniques for making a successful and delicious full-inclusion pie crust.
